Alright you hunter gatherers, the challenge is almost done. Lots of talk about recipes out there, this is good stuff. Many of you have been trying new foods and focusing on fueling for performance, which is great! I know many of you are missing some of your comfort foods. So, I offer this recipe from Katie M. These things are awesome!

Applesauce Pancakes

Ingredients:

2 eggs

4 tablespoons almond butter

1/2 cup of applesauce

1 teaspoon cinamon

1 teaspoon vanilla extract

Mix all ingredients in a bowl until smooth. Pour in a warm skillet coated with a little olive oil. Cook until the pancakes bubble, then flip and cook the other side. These will cook just like regular pancakes and should be good enough to eat plain!

  1. Any applesauce? W/o sugar of course!!! I want to try those tomorrow night;). Gene is doing a late 101, so I need something simple to make! I’m so excited- thanks for sharing!!!!

  2. My arm is still tingling from my biceps down through my fingers from yesterday’s OH squats. I Googled it, and there were tons of discussion board postings about people having the same issues after OH squats. It sounds like I pinched a nerve, but supposedly it’ll go away in the next 5 days or so. Has anyone else had this issue?
    Gene, due to your double-unders, pull-ups, box jumps, and overhead squats, I’m battered and bruised all over. Apparently, I need some work to keep up with your programming!

  3. Shar – I used my homemade applesauce so I have not looked at a jar to see what is in it, but make sure no sugar added. Enjoy! They are easy and super yummy!
