I needed a quick meal the other night and made this. The guys at work had made something similar and it was good, so I took a stab at it. Try it out and see if you like it!
2 Rotisserie chickens
2 Cans of coconut milk
1 Yellow onion
3 Bell peppers (red, yellow, green)
2 Cans diced green chilies
Ample amounts of cayenne, chili powder, paprika, and garlic
Romaine lettuce for the wrap
Heat up a couple of tablespoons of coconut oil in a large skillet. Dice up the veggies and saute them. While that's happening, shred the chickens. Once the veggies are done, add the chicken, chilies, coconut milk, and spices and mix well. Bring it to a boil and then simmer for about 5 minutes until it thickens up a bit. Throw it in the lettuce and add some guac and hot sauce. This is super fast and makes a bunch of food. Throw it in tupperware and you have lunch for a couple days as well!
