At the Regionals there was a tent for the athletes to stay cool between events. In this tent was a table with some great food. On this table of great food were some samples of Steve's Original Paleo Kits. Those who were lucky enough to get a few (or a few dozen!) know how good these things are! They also had a little something called the Paleokrunch Bar. These things were awesome! For those that don't know, Steve's Club does more than sell paleo snacks:
Behind the power of your support, the circle is growing. Steve’s Club is now a national program and CrossFit affiliates around the country are sharing their space and love with underprivileged and inner city youth. Kids around the country are discovering that a strong body equals a stronger mind and that every choice made today effects potential for tomorrow. Steve's Club kids are doing well in school, running the business that supports their passion and recuiting new members to join the force. Some have gone onto college! They are achieving things that once seemed impossible. When given a fighting chance, nothing ever is.To find out more about Steve’s Club, please visit stevesclub.org.
Pretty cool, buy some tasty snacks, help kids!
There may be one thing to consider though. I saw with my own eyes some people who ate in excess of 37 Paleokrunch Bars in a 24-hour period. Impressive. It may be tough to keep enough of the Paleokrunch Bars in your pantry if you love them so. When we got home Katie was inspired to come up with a grainless bar of her own and here's what she came up with. Order some from Steve's Club, but in the meantime this might just get you through!
Preheat oven to 350 degrees.
Put coconut, pumpkin and sunflower seeds, and almond slivers in food processor and pulse until coarsely chopped.
Place mixture in mixing bowl and add Almond Meal and mix.
Microwave coconut oil for 10-15 seconds to melt oil.
Add coconut oil and vanilla extract and mix.
Add honey and mix well.
Grease 9×9 pan.
Press mixture into pan and smooth out top.
Bake until golden brown on the edges about 15-20 minutes.
Let it cool and cut into bars.
Enjoy!
