As many of you likely know, although chicken breasts are a staple of Paleo or the Zone eating, they can get a little bit old. There's only so much you can do with them. I ran across this post from Freddie C at CrossFit One World (www.crossfitoneworld.com). Not only did it crack me up for obvious reasons, it made me switch up my typical chicken dinner. Added bonus, thighs are way cheaper than the standard tray of chicken breasts!
Why Breasts?
That's right…. I'm stating it here. I am not a breast man. I don't get the infatuation everyone has with breasts. They are at restaurants everywhere. They are in sandwiches, in soups, in salads, and in pastas. What's the big fuss about??? They are so dry and the flavor is only ho hum.
I am a thigh guy! I prefer them boneless and skinless. They still have some fat on them so they cook up yummy!!! One of my favorite ways to prepare them:
The Safeway Select Honey Garlic sauce is DELICIOUS! I use one bottle for about a dozen thighs. Just dump the thighs in a plastic bag, pour in the bottle, mix it up, and then let it sit for about five minutes.
Toss them on the grill. They cook up in about ten minutes. They are done when they come apart easily with a fork.
The finished plate: grilled boneless skinless thighs with broccoli and cauliflower steamed in a frying pan and sprinkled with grated parmesan cheese! The sauce makes a nice sweet glaze on the chicken thighs. I swear they taste like dessert. I've eaten ten in a sitting. SO GOOD!!!
Don't have time to prepare a good dinner at home? I call bullshit. From package to plate this entire meal took 15 minutes…..

Having never had the marinade, I can't comment on it, but if you're going strict with your paleo, there are plenty of marinades out there to experiment with. Give it a try!
