WOD

We'll take advantage of the nice, sunny weather for today's WOD. We see the sign-up is full. No worries, everyone who wants to come on out for this one. There will be plenty of room!

Bring clothes for outside, a water bottle, and some shoes good for running. And kicking!

Carne Asada and Paleo Spanish Rice

Ingredients:

1 1/2 pound flank steak

4 garlic cloves, finely chopped

1 jalapeno pepper, finely chopped

1/4 cup finely chopped cilantro

1 teaspoon cumin

1 teaspoon chili powder

1 teaspoon oregano

Pinch cayenne pepper

2  limes, juiced

1 orange, juiced

8 to 12 ounces beer (or beef broth)—I used broth

Directions:

Slice the flank steak on the diagonal into thin strips

Combine all ingredients in a large Ziploc bag or in a shallow dish (meat should be completely covered in liquid).

Marinate in the refrigerator at least 3 hours. Take out and drain off the marinade. Lightly salt the steak. The meat can be cooked in a skillet with coconut oil or grilled. (I would recommend grilling)

Cook 3-6 minutes on each side for medium-rare. 

Paleo Spanish Rice

Ingredients:

Cauliflower Spanish Rice:

1 head cauliflower

1 tsp. olive oil

3 cloves garlic, minced

1/2 yellow onion, finely chopped

1 small green bell pepper, finely chopped

3 T cilantro, chopped

2 T tomato paste (no added salt)

1 T water

1 4oz. can diced green chilies

Directions:

Rice the cauliflower in a food processor, set aside in a microwavable bowl.

In a saute pan, heat olive oil and saute onions, garlic and bell pepper. When onions are translucent, add tomato paste and green chilies and Tbsp. water. Turn heat down low and add cilanto… and maybe a little salt and pepper to taste (optional).

Mixture will be slightly paste-like. Add mixture to the bowl with the cauliflower, mix well, and heat in microwave for about 5 minutes (covered) and about 80% power.

  1. I am SO disappointed that I missed kickball! We had a birthday party to go to at 10am, but I would have considered skipping it had I known I’d be missing kickball!
