Here's another recipe that you can use during the challenge!
Thai Chicken Salad
In a bowl combine:
1 pound of chicken breast, cooked and chopped (you can grill, broil, or boil it – your choice)
1 bag of broccoli slaw (in the prepared salad section of the grocery store)
1 red bell pepper, chopped
1 yellow bell pepper, chopped
2 crowns of broccoli, coursely chopped
Dressing
1 garlic clove, minced
tblsp. of fresh minced ginger – even more if you'd like
1/4 cup of red wine vinegar
3 tblsp. of soy sauce
2 tblsp. of sweetener -agave or honey- anything will do.
1/3 cup of almond butter
Put dressing ingredients in blender, blend until smooth. Pour over cabbage mixture and mix well.
