Another great recipe from our in-house chef (who says she'll still send us recipes from Golden)!

Lettuce wrap carnitas 
 

Lettuce Wrap Carnitas

Ingredients:

1 pork tenderloin (got mine at King Soopers)

juice of 2 limes

1 T chili powder

1 tsp cumin

1 tsp oregano

1 tsp garlic powder

1/2 tsp coriander

1/4 tsp cinnamon

2 bay leaves

1/2 cup chicken broth (low sodium, gluten free)

1/2 a purple onion

1 green bell pepper

1 head of butter lettuce (you can find this at Sprouts in the packaged salad area)

store bought pico de gallo (or make your own)

store bought guacamole (or make your own)

Directions:

1. Get out your 'ol faithful crockpot and put the chicken broth in, the lime juice and the two bay leaves.

2. Dice up your onion and green pepper and then add to your crockpot (i would recommendusing a whole onion and even two green peppers because they are super delicious after they cook up)

3. In a small bowl mix up all the spices. Coat the pork with the spices and give it a little massage. Lay the pork in the crockpot and turn it on low.

4. Cover and forget it. It should be done in five to six hours.

5. When you return home you will be greeted with a wonderful aroma. Shred the pork. Get out the lettuce and put a few leaves on everyone's plate. Top with some meat, sauteed veggies, pico de gallo, and guacamole. If the kids don't like the idea of a lettuce wrap you can easily serve this in a bowl and add anything else they may like to it.

PS- i used some salad dressing on top of mine instead of guac or salsa, super good. Just play around with the recipe and make it your own. I promise you this pork is great with anything and awesome as leftovers.

  2. Though my abs are still destroyed from Friday’s sit up workout, I guess it’s a good thing we’re doing more after this weekend’s diet. Jake had a great time pushing on my swollen belly while we read books in bed after 3 Margaritas. I also enjoyed scaring the poop out of Tyson by telling him I was pregnant. Fingers crossed it’s just the food.

    Haha! Thats a good one Jill!! 🙂 Watching the games today for the little bit that i did, made me realize that I am not pushing it hard enough. I am determined to get my kipping pull up, strict push ups (no more knees), and 14# med ball… no more #10!!! This is gonna be fun. I am very excited to get back into the box this week! Whoo!!!
